DnA Foodcast Episode 36: Mac and Cheese

We’ll be honest: this week’s show is kind of a train wreck. Nobody gets hurt, mind you, there’s just a complete lack of proper instruction. Alexander and Dave are pretty lost when trying to prepare this recipe from Dave’s Aunt Beth. Then the panic sets in — luckily for them (and hopefully you, too!) the recipe turns out to be pretty darn tasty in the end.

The way Dave’s uncle wrote the recipe:

“Try to find large elbow macaroni regular is fine if you can”t
Large bags of shredded sharp, Monterey ,Colby,any other cheese you prefer I try and use at least 3 to 5 different kind of cheese. In sauce pan put a stick of butter melt add flour salt, pepper, dash of cayenne, about a tablespoon of vulcans spicy brown mustard blend together and add about three cups milk let thicken. Meanwhile cook macaroni drain and put in large baking pan. I usually use two boxes macaroni,then sprinkle cheeses into macaroni stir. Once sauce is thickened a little pour over macaroni. Brown some bread crumbs and sprinkle over top. Slice some fresh tomatoes and lay on top. Bake 350 for an hour.”

Our work through:

Boil macaroni, put aside.

In saucepan melt a stick of butter, saute in chopped onion if you want, let cook through before adding other ingredients. 3 cups milk, tablespoon of flour, tablespoon of cayenne, tablespoon of mustard and some salt and pepper. Heat and stir until slightly thick, then add in cheese and stir to incorporate. Pour over macaroni in buttered 9×13 pan.

Drizzle 3/4 cup breadcrumbs over top. Bake at 350 one hour.

Potato Salad (Bjorkman Style) on next week’s DnA Foodcast

Dave has one weakness: mayo. It doesn’t even matter that this delicious potato salad recipe from Ian McC. doesn’t even have any mayo in it. See, in Dave’s mind: potato salad = mayo. Anyway, Dave participated from afar in this episode, while Alexander cooked and got himself burned! Yup, it’s a tension filled show.

Hardware: Pot to boil the potatoes and saucepan to make the dressing. Big bowl for salad.

The salad:

  • 6 medium potatoes (the smaller ones keep their form better), boiled (15 minutes)
  • 1 bunch scallions, cleaned and chopped
  • 1 bunch radishes, cleaned and chopped
  • ½ pound bacon, pan fried or oven broiled, drained of fat (Go with 1 lb)
  • 1 tsp salt
  • 1 pinch pepper
  • 1 tsp dill weed (finely chopped if fresh, dry is fine)

Dressing:

  • 4 eggs, well-beaten
  • ¾ cups vinegar (apple vinegar is nice)
  • 4 tbsp flour
  • 4 tbsp butter
  • ¾ cup sugar (increase to taste, but this should be good)
  • ½ pint whipping cream

Ceviche on next week’s DnA Foodcast

“Ceviche tipico” if far and away the most exotic dish we’ve made on the foodcast. Given to us by John C., a totally legit chef, required some extra effort on our part — stumbling along the way — but it was well worth learning how to make this refreshing dish and experiencing “Leche de Tigre”! Give the show a listen before you go and try making ceviche for yourself. It’s definitely one episode you’ll want to hear where we got confuzzled along the path to tasty.

Hardware: Bowls (so many bowls!) and a really good knife.

Ingredients:

  • 1 pint lime juice (“fresh only,” but Dave went bottled)
  • 1 clove garlic
  • 2-3 ribs of celery
  • 2 med. Sized red onion (one may be fine)
  • 1 knob ginger
  • Simple syrup (1 part water to 1 part sugar, it’s “simple” to make)
  • 1 bunch cilantro
  • 2-3 hot Chilies (aji lima, red or fresno jalepeno, thai bird chile, serrano, jalapeño in order of desirability)
  • 2 lbs. very fresh firm fleshed fish (striped bass, snapper, grouper, etc.). Dave and I both went with snapper. Make sure the fishmonger filets and skins it for you (such a pain otherwise).


Whatever-berry Sponge Cake on next week’s DnA Foodcast


Why is it so hot? We’re gonna try to stay cool on the DnA Foodcast for a little bit, starting with next week’s “Whatever-berry” sponge cake. The base is a sponge cake, topped with whip cream and whatever berries you want. Strawberries? Sure! Blueberries? Why not! Grapes? Whatever!

Hardware: Deep circular dish. 2.5 qt/2.3 liter.

Ingredients:

  • Eggs
  • Vanilla
  • Sugar
  • Flour
  • Heavy cream (whipping cream)

Rice Bake on next week’s DnA Foodcast

The DnA Foodcast gets a semi German recipe next week, by which we mean it simply comes to us from two Germans. Timo and Ines of Kiel, Germany, sent us a Chicken Rice Bake. However, after making it, one could easily take the chicken out for it to be a standalone vegetarian dish. For meatatarians, it’s a great side with some sausages or steak.

Warning: The one issue that Dave and I ran into was the rice portion. 500 grams (1 lb.) is a lot of rice. Below is the original recipe, but we strongly recommend cutting the rice down to 1 1/2 – 2 cups, which would then be cooked in 3-4 cups of vegetable stock. The rice-to-ingredient ratio is much better by cutting down the amount of rice.

Hardware: Deep circular dish. 2.5 qt/2.3 liter.

Ingredients:

  • 1 onion
  • 1 red & 1 yellow bell pepper
  • 200 g corn kernels
  • 2 table spoons sunflower oil
  • 4 ½ cups vegetable stock
  • 500 g white rice (which is 2 3/4 cups of rice. If you’re using Basmati, that ends up being about 5 and a half cups of water.) Note: Again, we recommend using only about 2 cups.
  • 400 g (1 lb.-ish) chicken breast fillet (thighs are juicier)
  • salt & pepper
  • paprika spice
  • 3 eggs
  • 1 container (125 g) crème fraîche (sour cream is fine to substitute)
  • 1 bunch of fresh herbs (parsley, chives, basil or thyme) (but frozen herbs will do fine too)
  • 200 g (1/2 lb) grated gouda cheese
  • 2 beefsteak tomatoes2 cups flour

Milk Tart on next week’s DnA Foodcast

The DnA Foodcast goes south next week. Like, about as far south as we can go without being attacked by penguins. Next week’s episode was demanded by South African native Ludwig K. and we really couldn’t help but try it. This recipe comes in two parts. You can skip the first by buying a pie crust from the store, but as we prove in this episode, it’s way easier than you think to make it on your own.

Hardware: A Pyrex pie pan. Pie tin. Or something circular to make a pie.

Ingredients Crust:

  • 2 cups flour
  • An egg
  • 1/2 cups sugar
  • 1 tsp baking powder
  • A stick of butter. That’s 8 tbl or 125 grams.

Ingredients pie:

  • 4 1/2 cups milk
  • 2 1/2 tbsp cornstarch
  • 2 1/2 tbsp flour
  • 1 cup sugar
  • 3 eggs
  • salt
  • 1 tsp vanilla extract
  • 1 tbsp butter


Stuffed Mushrooms on next week’s DnA Foodcast

The DnA Foodcast returns, delving deeper into the dark magic of appetizers that could stand as a whole meal. Bryan F.’s stuffed mushrooms are filling and you can easily cut the recommended ingredients by half to feed one or as a side for two. This recipe allows for a lot of evolutionary choices, have fun with it. The basics:

  • 10 ounces of pork sausage crumbled. (Dave cut breakfast links. Alexander used some Chinese sausage, cutting off the casing and cooking in pan.)
  • 2 cups shredded Italian cheese blend, divided. (Don’t panic if you don’t find this at the store. Mexican is cool too. Italian blends usually include Mozzarella, Provolone, Asiago, Romano.)
  • 1/2 cup ricotta cheese. (This is what binds everything together, so it’s the important part.)
  • 2 green onions, thinly sliced. (Again, if you’re cutting everything by half, only use one. Dave still used two and it was a bit much for him.)
  • 3 tablespoons finely chopped sun-dried tomatoes, rehydrated. (Alexander can’t stand these so he skipped.)
  • 12 medium portobello mushroom caps. (You may only find the HUGE portobellos at your grocer. It’s totally cool to use whatever mushrooms you find that look like they could take a spoonful of stuffing. You may also find specially branded “stuffing” mushrooms that are larger than normal.)
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar (optional)

This week, the boys prepare a savory, soupy southern treat: Etouffee. It requires quite a few ingredients, but is surprisingly easy to prepare. The only drawback is that the original recipe calls for crawfish tails — very hard to find if you live in San Francisco or Boston. Thankfully, shrimp works, too!

Etouffee on next week’s DnA Foodcast

Allow us to assist: Ay Two Fay. The DnA Foodcast goes cajun next week … well, as close as we can get without access to crawfish. This classic, homey Louisiana meal was in a book of old family recipes given to Trey B. by his father-in-law. Don’t let the fancy French name or list of ingredients concern you, this was so amazingly simple to prepare and it’s even better as leftovers. Here we go:

  • 1 lb Louisiana crawfish tails. A bag of cooked peeled shrimp from your grocer’s freezer works. You can also buy fresh shrimp, but, as Dave learned the hard way, that takes some prep work.
  • 1 stick of butter
  • 4 shallots (chopped)
  • 1/4 cup parsley
  • 1/4 cup celery (chopped)
  • 1/2 lemon
  • Salt (to taste)
  • Cayenne (to taste)
  • 1 tsp Paprika
  • 1 Tbsp cornstarch
  • 1 can (14oz) chicken broth
  • 1 can (or fresh) chopped mushrooms (optional)

Teriyaki Chicken on next week’s DnA Foodcast

The DnA Foodcast gets cluckin’ cookin’ with some Teriyaki Chicken on next week’s episode. Submitted by Christian G, this teriyaki sauce ends up tasting as good — possibly better — than those you might find at a local restaurant or from the bottle. It was really, really good. If you want, feel free to grab some vegetables and get those in the mix. The basics:

  • 1 lb. (500 grams) of chicken or beef. If you get chicken, try to find boneless thighs. They stayed moist and were amazing.
  • Oil (peanut, corn, olive or whatever)
  • Flour (or corn starch)
  • 1/4 teaspoon garlic power (one garlic clove is a fine substitute)
  • 1/2 – 1 cup brown sugar
  • 1/2 cup soy sauce
  • 1 cup water (we both went with chicken broth)
  • Rice

Tacos on next week’s DnA Foodcast

Next Wednesday the DnA Foodcast celebrates Cinco de Mayo in classic gringo fashion with tequila and tacos, sponsored by Espolón tequila. The recipe comes from Dave, but we may make it a tradition to try a different taco recipe each year. This time around, it’s the basics:

  • 1 lb. (500 grams) ground meat. Dave chopped some steak. Alexander just used hamburger meat. No hard rule.
  • 1 package taco seasoning.
  • Can of beans (black or refried).
  • 1 avocado
  • Lettuce, tomato, cabbage chopped (whatever veggies you want)
  • Shredded cheese
  • Salsa (not really needed)
  • Sour cream (also, not necessary)
  • Taco shells (soft or hard)

Breakfast Burrito on next week’s DnA Foodcast

Next Wednesday the DnA Foodcast combines ideas from several cultures that taste delicious together. For our second listener submitted recipe we went with something that we hope becomes the traditional Breakfast Burrito — it will be around our homes.

The original portions listed below can feed a small army. We cut everything by half for the show and it was still enough food for several days of delectable meals. Here is what you’ll need for next week’s show. Remember, if you’re not feeding a big family or want massive amounts of leftovers, you can easily cut this by half:

  • 1 lb. (500 grams) sausage. Any type will do, chorizo or brats, whatever. Fresh sausage lets you take off casing and crumble it up in the pan.
  • 1 package Potatoes O’Brien. A “package” can be 1 lb. or more. Will said to “just buy Ore-ida.” That’s an option and what Dave did. You can also easily make it yourself by cutting (2) russet potatoes into “lil tiny adorable cubes” and mix with (1 of each) onion, green pepper. Alexander prepped it before the show, cooked it in real time.
  • 6 eggs. We went with 3 on the show.
  • 1 package shredded cheddar cheese.
  • Flour tortillas
  • Hot sauce
  • Salsa
  • Sour cream (not necessary, but oh-so-good)

Tangy Chicken on tomorrow’s DnA Foodcast

For our initial episode featuring a listener submitted recipe we went with the first enthusiastic email we received at the DnA Foodcast. It may be unconventional, but it’s a Tangy Chicken meal with one component even we weren’t sure of: a microwave. Don’t panic. The ingredients for Tyler C’s recipe are simple to obtain and you can easily make it using an oven or stove top. What you’ll need:

  • 1 lb. (500 grams) of chicken breasts.
  • 1/2 cup honey.
  • 1/2 cup bottled Russian or Catalina dressing (Dave and Alexander both went Catalina).
  • 1 package of dry onion mix. Something like this.
  • Rice to serve on.
